Bleu Hinkle Burgers

2 tbsp. Hiland Butter
2 medium onions, cut in half and then sliced
2 tsp. dark brown sugar
2 lbs. lean ground beef
1 cup bleu cheese
1 tsp. Daddy Hinkle’s Spicy Pepper, All Natural Sugar Free, Sea Salt Blend
6 slices pepper bacon, cooked crisped
3 tbsp. olive oil
6 sour dough buns or Kaiser rolls

Melt 2 tbsp. butter in a heavy cast iron skillet over medium-high heat.
Add onions and brown sugar. Cook and stir for six minutes.
Reduce heat to low. Slowly cook mixture, stirring often for 25 minutes
or until the onions are a caramel color. Set aside.

Preheat grill to 350 degrees.
Combine ground beef, bleu cheese and Daddy Hinkle’s Spicy Pepper Blend.
Mix thoroughly and shape into 6 patties.

With grill at 350 degrees,
place patties on grill and grill for 5 minutes on each side for medium doneness.
Brush buns with olive oil and toast on grill during the last minute of cooking.

To assemble, place patty on bun, top with one slice of bacon (broken in half) forming an “X”,
and spoon some of the caramelized onions on top. Place top of bun on onions.
May serve with mayo.
Serves 6.
