Crown Bologna

1 – 5 lb. Bar-S Bologna
2 tbsp. Daddy Hinkle’s Southwest Rub
2 tsp. cayenne pepper
1 cup brown sugar

1. Cut the bologna lengthwise into 2 pieces.
Cut a ¾ inch square pattern on each flat side of the half about ½ inch deep.
2. Sprinkle Daddy Hinkle’s on each half. Sprinkle cayenne pepper on each half.
3. Sprinkle ½ cup brown sugar on each half.
4. Place both halves in a deep, ½ foil steam pan. Place on smoker.
5. Smoke for about 1:15 – 1:30. Cook to internal temperature of 140 degrees.

*Before starting this recipe, prepare you smoker so it will be ready. I use a Brinkmann Bullet Style Smoker. This takes about 30 minutes to do.
