First Brisket!

What a surprise! Never having cooked a brisket before for not wanting to wait 12 hours or more to taste the result, David finally decided to cook one! The brisket was first well wetted with Daddy Hinkle’s Liquid and then rubbed with a lot of Daddy Hinkle’s Original Dry: about one ounce of Liquid and one half ounce of the Dry per two pounds of Brisket. More if you want!
Place the Daddy Hinkle’s seasoned Brisket uncovered on a rack in the middle of an electric smoker or oven (if you use your oven place a pan under the meat to catch the dripping to keep the oven clean), set the temp to 180 degrees and cook the Brisket for 12 hours. Lot of time at low temp is the key!!
Nothing is noted about weight when setting the temp and cooking time on our electric smoker. I just cut the 11 lb brisket into two parts to have a couple of different samples. I am not sure the weight of the Brisket makes any difference when cooking at 180 degrees. Some of you may know a lot more than I do. Size and weight may be determined more by space available in the oven or smoker.
Hope you all will let me know. I want to cook many more briskets and plan to use them to demo our Daddy Hinkle’s marinades and seasonings. I love paying $2.00 more or less a pound for meat and getting a good result. I liked the BBQ sauce too.
David’s SWEET & TANGY BBQ SAUCE!
4 oz Daddy Hinkle’s Original Dry Seasoning
15 oz Tomato Sauce
15 oz Katsup
8 oz Vinegar
4 oz Brown Sugar
4 oz Blackstrap Molasses
1 Tablespoon Mustard
Throw everything together in a sauce pan and bring to a boil, reduce heat and cook until sauce is thickened. This is a sweet tangy sauce that David likes. It will have an onion and garlic flavor from the Daddy Hinkle’s Original dry mix.
