Aji (ah-hee) Colombian Salsa with a twist

Aji is a  finely chopped salsa used to add spice to meals in Colombia. You can find Aji on just about every table in Colombia. Our Aji is a very finely chopped mix of tomato, garlic, onion, cilantro, lime juice, vinegar, Daddy Hinkle's Hotter'n $700, and a bit of water.

Christina Haley's Delicious Daddy Hinkle Sloppy Joes

Christina's sloppy Joe recipe rivals any leading brand! This recipe can be made with lean ground beef or turkey. She also makes a more veggie friendly version by adding in shredded carrots and celery. The carrots, she says, will cut down on the acidity and act as a buffer for heartburn. This recipe should make around 18 sandwiches, and it freezes very well.

Daddy Hinkle's Brisket

The key to cooking brisket is a long cooking time with a low heat. 

 We chose an 8 pound brisket and marinated it with O'riginal in a Cookshack electric smoker at 180  for 12 hours.  The result was tender and delicious.  If you don't have a smoker available don't worry, the oven will yield great results, too!

Note. A remote digital thermometer takes the guess work out of cooking. You'll always know the internal temp of any meat and can avoid over-cooking.
